My cheap laser thermometer is giving me crazy wrong numbers when I point it at my pizza stone. I need something better! Does anyone have advice on a good, accurate laser thermometer I should buy, or a simple trick you use to check if the oven floor is really at that high 850F heat? Thanks!
 
I use the ThermoPro TP30 and it’s been accurate up to 900 F. Make sure you’re aiming close and at the center of the stone. Is your oven gas or wood-fired?

Would you consider trying the flour test?
Sprinkle a small pinch of flour directly onto the center of the preheated stone. If it turns deep brown/black in under 30 seconds, you are confirmed to be in that high 750-900F range for Neapolitan pies.
If it slowly takes about a minute to turn golden, you're only closer to 550-600F.
But for a truly accurate surface measurement, the professional standard is a high-heat Type K thermocouple surface probe.
