I swear by a steel. It transfers heat faster than stone, so you get that leopard‑spot bottom even in a home oven. Biggest fail? Forgot to flour the peel once.. created a perfect calzone by accident.
 
My best accessory is parchment paper. it can handle high heat for the first minute or two, just long enough to keep my dough from sticking. Worst fail: stretched the dough so thin I could read a book through it.
