No tomato, no cheese

Hear me out, I've been making homemade pizzas since I moved to North Carolina. My partner just found out she's allergic to tomatoes, so we can't use red sauce. She's also vegetarian and doesn't like cheese much, so I'm trying new things.

I tried using garlic and olive oil with mushrooms and spinach, it was okay. but felt like it needed more flavor. Has anyone made a simple white sauce or veggie spread without dairy that works well?
 
I've done something similar, blend soaked cashews with a little garlic, olive oil, lemon juice, and nutritional yeast. It makes a creamy, slightly cheesy base without dairy, and you can layer veggies on top. Works great with mushrooms, spinach, or roasted peppers

There is a pizza restaurant near me that has a spinach and roasted garlic pizza with a white sauce. I never thought I would like something like that but it is my favorite pizza when I go there.
