My new KitchenAid and the wrestler's pasta secret

So today I used my new 12-cup KitchenAid food processor for the first time. It normally costs over $200, but I found it on Amazon for $159. To test it, I made homemade pasta using a recipe I got years ago from a chef in Cozumel who used to be a pro wrestler! His secret? Mix the dough until the friction warms it to 112°F. That heat helps combine the flours for the perfect texture. My old Waring processor lasted over 25 years before finally burning out, so I'm hoping this new machine lasts half as long. If you love making pasta, definitely try this method but don't use a stand mixer, or you'll ruin it
 
I agree with you that the pasta dough turns better in the food processor than in the standing mixer. Kneading in the standing mixer is great for bread types of doughs where you need to "awake" the gluten, but for pasta definitely food processor. Btw, great deal for the kitchenaid food processor. Also, i wouldn't mind you to share the pasta recipe here :)
 
That's a wild pasta tip lol, never heard of mixing dough to 112°F! love that kind of old school chef wisdom, hoping it gives you another couple decades of pasta magic.

Yeah bread and pasta doughs behave so differently. The food processor just nails the texture for pasta. I'll dig up the recipe and post it here soon, it's surprisingly simple but amazing.

Right???? It sounded odd at first, but it really works! That little heat boost changes everything. Fingers crossed this KitchenAid holds up, I'm ready for another 20 years of pasta adventures
