Hello everyone — I’m new here, and I’ve been diving deep into the classic Forno Bravo archives. Very inspiring stuff!


I wanted to share some thoughts from my exploration of more compact pizza ovens (especially Ooni models) and how they compare to traditional dome builds. I also have a few questions for this knowledgeable community.




🔍 My Observations​


  1. Heat Up Time & Retention
    The Ooni ovens (especially the gas/wood hybrid ones) seem to reach cooking temperature much faster than many dome ovens. But I’m still curious how well they retain heat over multiple pizzas compared to mass thermal mass domes.
  2. Versatility & Portability
    One big plus for Ooni is portability and relatively lower installation overhead. It’s interesting to consider a hybrid approach: you could use a compact oven when you don’t have time, and do a full build later.
  3. Fuel Efficiency & Fuel Type
    It looks like some Ooni models burn wood more efficiently (less fuel per pizza) in short durations. But for long sessions, large domes might have the edge.



❓ Questions for the Forum​


  • For those who have experience with both styles: after several pizzas, how much does the temperature drop in your dome ovens versus portable ones?
  • Any tips on insulating or improving heat retention in smaller pizza ovens?
  • Do you think there’s room for combining portable and brick-oven approaches in a single setup?
