Been vegetarian for about 8 months now, and honestly? most of the transition has been pretty smooth but this one thing that keeps haunting my pizza dreams and its pepperoni. Tried a few plant based pepperoni options at this point, and let me tell you some taste like seasoned cardboard, others have a weird rubbery texture that just... no, There has to be good options out there right?
Also, if you've got tips on how to make plant based pepperoni taste better, I'm all ears. Thanks all
 
Hi @pattypizza, forget the weird cardboard brands. The one you absolutely must try is the Yves Veggie Pepperoni. It's got that grease factor and chew that is surprisingly close. Toss it in a pan for 2 minutes before topping your pizza, it'll make a huge difference!
 
Most of the vegan pepperoni I’ve tried are soy or seitan based, and they only taste decent when they get some char. I toss mine on a cast iron pan for 30 seconds a side before baking. You could also mix your own with tomato paste, smoked paprika, fennel, and a little maple like surprisingly close in flavor.

I’ve been trying to cut back on meat and started experimenting with vegan toppings for pizza nights. Your mix sounds tasty, do you add any binder to hold it together, or just spread it like a paste?
