Now in my experience, the way pepperoni curls into those little cups has a lot to do with how it's sliced and the fat content. The higher fat, natural casing styles tend to curl up beautifully when exposed to direct heat, while the thinner deli sliced types usually just lie flat. Also, I've noticed oven setup plays a role because high radiant heat from the top really gets the edges crisped and curled, but if its in an even bake setting, it seems to keep them flatter.
