Rust concerns with pizza ovens on the road

I run a small food truck in Tampa and we're adding a pizza oven for weekend events. I'll be using gas for speed but want wood for flavor when we do private gigs. Has anyone had issues with rust or burner reliability after heavy use?

Yeah, rust shows up quick in humid spots like Tampa if you're not cleaning and drying the oven often. Burners usually hold up fine as long as you keep ash and grease out of the way. Are you using a dual-fuel setup or switching parts when you go wood-fired?

We're planning to go with a dual-fuel setup to make it easier to switch between gas and wood.

Keeping the ash cleaned away from the burners will be a key part of our daily routine. In your experience, is a good waterproof cover enough to keep most of the rust at bay or is a full sand and recoat just part of the annual maintenance for a food truck oven?
