Happy Thanksgiving!

I remembered that last year I fired up my outdoor pizza oven and thought, why not turkey?? It cooked faster than I expected, but keeping the skin from burning was tricky. Anyone else experiment with pizza-oven turkey?

Closest thing to a turkey was 2 large chickens on a bed of veggies. Using residual heat is the best way in my opinion but you need an insulated door. Once the oven is at temp (a day or two after pizza night) I pull all of the coals out. If I don't they reignite and impart smoke flavor on the food. This can be a good thing for proteins, but the veggies had an overwhelming smoke flavor.
